Dressing:
3 tablespoons light sour cream
2 tablespoons apple juice
1 tablespoon cider vinegar
2 teaspoons honey

⁄2 teaspoon grated fresh ginger root
Salt and pepper
Combine all salad ingredients. Combine all dressing
ingredients and blend well. Pour dressing over salad.
Add salt and pepper to taste. Toss and serve.

*Jicama is a crunchy root vegetable found in the
